Bandeja Paisa

A very common meal in Colombia, especially in the department/state of Antioquia, is the Bandeja Paisa or the Paisa Platter. There are also variations known as the Bandeja Antioqueña or the Bandeja Montañera.

The platter consists of red beans cooked with pork, white rice, ground or powdered meat, chicharon, fried egg, plantain (patacones), chorizo, arepa, hogao sauce, avocado and lemon heaped on an oval platter. This is often served with mazamorra which is a corn based drink mixed with phttp://colombia.escapeartist.com/bandeja-paisa/anela and milk.

Here it is in ”recipe form”

Avocado
Baked plantains (Tajadas de platano)
Fried egg – sunny side up (Huevo frito)
Fried pork belly (Chicharrones)  – fatty but very tasty !
Ground or powdered beef (Carne en Polvo)
Hogao Sauce – a tomato sauce made with chopped tomatoes and green onion
Lime
Pinto beans (Frijoles paisas)                                                                                                                                    Sausage (Chorizo)
White rice (Arroz blanco)

This is not what you would call ”haute cuisine”. The Bandeja Paisa is more like a typical ”farmers” platter heaped high and meant to satisfy a healthy appetite.

The lead photo is a Bandeja Montañera with potato, yucca and blood sausage (morcilla) as well.
